I’ve seen this bright beautiful Watermelon mint & feta salad making it’s rounds all over the web and I just couldn’t resist. It’s still super hot here in Maryland so I went for it and honey let me tell you, I have been missing out! I’ve probably made this salad 3 times within the last week because sharing is caring and also because it’s just that good. Many people wait until spring and summer months to enjoy this salad, but as someone on my Instagram page commented, “I’ll take watermelon any time of the year!” I couldn’t agree more, so don’t be surprised if you see me on Instagram curled up in a blanket eating a watermelon salad!
Another great thing about this super easy watermelon salad with mint & feta is you can literally add anything you like. Many people add cucumbers, green onions, arugula, radishes; it’s really all about what satisfies your flavor palette. I chose to keep it simple because I’m a sucker for sweet mint. SALAD DRESSING OR NO DRESSING?
I’m team dressing because in my opinion the lime juice and honey brightens and adds another element of flavor to the watermelon salad. You don’t need to add the dressing but it’s so good and so worth it. I like to serve the salad as it’s pictured but you can get creative and serve these up as appetizers and even on skewers.
