Vanilla Cardamom Candied Pecans

  • 1 lb raw pecans
  • 1/2 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 1 egg white
  • 1 table spoon vanilla extract


  1. Preheat the oven to 250F and line a baking sheet with parchment paper, set aside.
  2. In a large bowl, combine the pecans, sugars, cinnamon, cardamom, and salt. Mix everything together.
  3. In a small bowl, whisk the egg white until frothy and add in the vanilla extract.
  4. Pour the egg white mixture over the pecans and stir everything together well. Make sure the pecans are evenly coated.
  5. Pour the pecans onto your lined baking sheet, spread evenly.
  6. Bake for 1 hour, stirring every 15-20 minutes
  7. Let the pecans for cool on the baking sheet and enjoy!


Store in a tight container or storage bag at room temperature.
