Ingredients

Scale
  • 5 large sweet potatoes
  • 1 stick unsalted butter
  • 1 cup sugar
  • 1 cup light brown sugar
  • 1/4 cup heavy cream
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3 tablespoons orange or pineapple juice
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350F.
  2. Peel the skin off your potatoes with a peeler. I like the Pamper chef serrated peeler but you can use whatever you have.
  3. Once all of the potatoes are peeled slice them into 1/2 inch thick slices and place them in a casserole baking dish.
  4. In a medium pot melt the butter and add the sugars, mix well and then add in juice and heavy cream. Whisk everything together so it’s creamy. Add in the cinnamon, nutmeg, and maple syrup, mix well.
  5. Remove the pot from the heat and stir in the vanilla extract.
  6. Pour the mixture over the potatoes and try to massage the mixture onto the potatoes to ensure everything is well distributed and coated.
  7. Cover the potatoes with aluminum foil and bake for 40 minutes. After 40 minutes, remove the foil and baste the potatoes, then bake for another 20 minutes, uncovered.
  8. Spoon the syrupy mixture over the yams and serve immediately.
