Stir Fried Cabbage and Asparagus

This week is all about easy dinner and lunch options because while being home, many of us are struggling to maintain our creativity and momentum in the kitchen these days. I think quarantine is taking a toll on everyone differently which is okay and expected. Realizing that, I really wanted to dedicate this week to simple dishes that take just a few minutes but will still provide a great lunch and dinner experience. I’ve been craving fresh crunchy vegetables and cabbage is my one of my favorites so I mixed up some cabbage and asparagus to make a delicious Stir Fried Cabbage and Asparagus side dish. I say side dish but I’ve been eating it by the bowl and this recipe is quick upgrade to your regular steamed cabbage!! If you have been following me for a while then you know that I love brown sugar in savory dishes so there is a little bit of that in here, chili crisps for some authentic deep heat, and of course soy sauce. These dish comes together in 20 minutes and will definitely become a favorite. 

How to make Stir Fried Cabbage and Asparagus

Step 1

Heat a wok or large deep skillet over medium high heat for a few minutes then add in the oil. While it’s heating make sure your cabbage, onions, and scallion are all chopped well. The onions should be thinly sliced as shown below.

Also your asparagus should be trimmed at the ends. Be sure to snap off the bottom of each spear; it should separate naturally. Once the oil is hot stir in the garlic, ginger, scallions, and brown sugar, and let let them cook for 20 seconds or so, then add in the cabbage, onion, and asparagus. Turn the heat to high and stir constantly for another 3-4 minutes. 

Step 2

Add in the soy sauce, broth or water, chili crisps and continue to cook until the cabbage is tender.

Add in more soy sauce if desired and garnish with sesame seeds. You can season with salt & pepper if needed. Try this recipe with my Teriyaki chicken meatballs, they pair very well together.

Description

An easy stir fried cabbage and asparagus dish made cooked in garlic ginger, soy sauce, and chili crisps


Ingredients

Units Scale

3 tablespoons canola or peanut oil

1 large green cabbage, chopped

1 small white onion, sliced

2 scallions, chopped

8 asparagus spears, cut into small pieces

1 tablespoon minced garlic

2 teaspoons peeled and minced ginger

2 tablespoons brown sugar

1 cup chicken broth or water

1 tablespoon soy sauce

2 tablespoon spicy chili crisps (just use 1 tbsp if sensitive to spicy food)

Salt & pepper, to taste
