To make the simple syrup
Simmer the water and honey in a small pot over medium high heat until the honey is full mixed into the water. Bring the water to a boil then reduce to a simmer for 10 minutes. Remove from the heat and let it cool completely before using. You can store in the refrigerator for up to 2 weeks.
For the cocktail
- Add ice, vodka, lemon juice, honey simple syrup, and a cinnamon stick to a shaker. Shake until cold and strain it into a chilled coupe glass. Add a cinnamon stick for garnish (optional).
