You guys, I love mashed potatoes but sometimes (sometimes) I want something a little lighter with less carbs but still taste amazing. I’ve been playing around with cauliflower and trying to create a creamy consistency that would emulate mashed potatoes. These Roasted Mashed Cauliflower is pretty darn close and I think you will agree. While this recipe is super easy it does involve two cooking methods; steaming and roasting. The first time I made this I roasted the cauliflower and blended it and the consistency was a bit too thick. I already knew that steaming and blending would be too watery for my liking so the best solution was to roast half and steam half. I keep the seasonings very simple by just using salt and pepper but garlic and parmesan would be great as well.
How to make Mashed Roasted Cauliflower
Step 1
Preheat the oven to 400°. Chop up your cauliflower head into small pieces and divide into two. Toss half of the cauliflower with olive oil and roast on a baking sheet in the oven for 20-25 minutes, until they start to crisp up.
Step 2
Steam the other half on the stove with 2 tbsp butter until the stems become tender. Reserve the water incase you need it in the next step.
Step 3
In a food processor or blender, puree the steamed cauliflower and roasted cauliflower until smooth. Add some of the reserved water if the cauliflower is too thick. Here you can add in some heavy cream for a creamier consistency. Season with salt & pepper. Melt the remaining butter and mix it into the cauliflower mash. Enjoy!
