A quick and delicious peach cobbler topped with a buttery crumble

The peach filling
- 2 –15 oz canned peaches
- 1/3 cup brown sugar
- 1/3 cup sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg (optional)
- Pinch of salt
- 1 tsp vanilla extract
The crumble
- 1 cup flour
- 1/2 cup brown sugar
- 1/4 tsp kosher salt
- 1 tsp cinnamon
- 5 tbsp melted butter
Instructions
- Preheat the oven to 375°. In a medium size pot over medium high heat combine the peaches (including the liquid), sugars, cinnamon, nutmeg, salt, and vanilla extract. Stir everything together, bring to a boil, then reduce the heat to low and simmer the peaches for another 8-10 minutes.
- To make the crumble combine the flour, brown sugar, salt, cinnamon, and melted butter together. Stir everything together to combine. You should have small, medium, and large crumble pieces.
- Fill a small to medium sized baking dish or ramekins with the peaches. Using a ladle, pour enough liquid over the peaches to cover most of them. You do not have to use all of the liquid, I don’t. Top with the crumble and bake for 35-40 minutes. Let the peach crumble cool slightly before serving.
