Honey Grapefruit syrup
- Slice the grapefruits in half then juice (or squeeze the juice) into a small pot. Pour in the sugar and simmer on medium heat until everything begins to boil.
- Reduce the heat and stir in the honey and let it simmer until the mixture starts to thicken. It should take 15-20 minutes. Remove from the heat and let it cool while it continues to thicken. Store the syrup in the refrigerator for 2-3 weeks.
Add the ice, tequila, lime juice, and grapefruit syrup to a cocktail shaker and shaker until chilled – about 20 seconds. Pour the cocktail over ice and top with sparkling water. Garnish with a grapefruit wedge and enjoy.
