4 pounds spare ribs

1 teaspoon kosher salt

2 teaspoons ground black pepper

4 tablespoons cozy good seasoning

2 tablespoons brown sugar (light or dark)

2 tablespoons olive oil


1 and 1/2 cup barbecue sauce

1/2 cup carolina gold sauce

1 tablespoon Worcestershire sauce

1/4 cup Boss Sauce (optional)

1 tablespoon brown sugar


  1. Preheat the oven to 350F. In a small bowl, mix the salt, pepper, Cozy Good Spice Blend and brown sugar together and then set aside. Rinse your ribs off, pull off the membrane from the bony or underside of the ribs and discard it.
  2. Place the ribs on a baking sheet lined with aluminum foil, shiny side up. Rub the ribs with the dry seasoning blend on both sides. Press the rub into the ribs until every part is coated in seasoning and drizzle with the olive oil.
  3. Cover the ribs in foil as pictured above and place into a roasting pan or casserole dish. Bake for 2 hours and 30 minutes.
  4. While the ribs are cooking, mix together the ingredients for the sauce in a small pot and warm it on the stove. Just a simmer.
  5. 15 minutes before the ribs are done increase the oven temperature to 400F and then carefully remove the foil and pour or brush the sauce on the ribs. Continue to bake for another 15 minutes.
  6. Let the ribs rest for 15 minutes before cutting. Feel free to sauce the ribs again, if desired.
