Add the lemon simple syrup, lemon juice, bourbon, and egg white to a shaker. Dry shake for 1 full minute then add in the ice and shake for 20 seconds. Double strain the cocktail into an old-fashioned or coupe class.
Float in the red wine using the back of a spoon.
Egg white substitution: aquafaba. You can always leave the egg white out if you don’t prefer it.
