Rinse and cut your peaches in half and remove the seed. Heat the olive oil in a grill pan over medium-high heat then once hot, place the peaches open-faced down into the grill pan. Cook for 4-5 minutes on each side then remove from the pan.
Once the peaches have cooled enough to touch, slice them and gently wrap them in a slice of prosciutto. Do this for all of the peaches.
Arrange your salad by adding the lettuce to a bowl, add the prosciutto-wrapped grilled peaches, pecans, goat cheese, red onion, and drizzle on the balsamic dressing.
Whisk all of the ingredients together in a bowl and cover until ready to use.
