Grilled Peach and Prosciutto Summer Salad for quick and easy dinners or entertaining.


Units Scale
  • 1 cup Vanilla Cardamom Pecans
  • 2 tablespoons olive oil
  • 4 fresh peaches
  • Prosciutto slices, 1 slice per peach slice
  • Spring salad mix and arugula
  • Goat cheese
  • Red onion (optional)

Balsalmic Vinaigrette

  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tsp ground black pepper
  • 1 tsp salt


  1. Prepare your Vanilla Cardamon candied pecans
  2. Rinse and cut your peaches in half and remove the seed. Heat the olive oil in a grill pan over medium-high heat then once hot, place the peaches open-faced down into the grill pan. Cook for 4-5 minutes on each side then remove from the pan.
  3. Once the peaches have cooled enough to touch, slice them and gently wrap them in a slice of prosciutto. Do this for all of the peaches.
  4. Arrange your salad by adding the lettuce to a bowl, add the prosciutto-wrapped grilled peaches, pecans, goat cheese, red onion, and drizzle on the balsamic dressing.

Balsalmic Vinaigrette

  1. Whisk all of the ingredients together in a bowl and cover until ready to use.
