I could not let the summer go by without making something with peaches. They are my favorite summer fruit that I love to enjoy in desserts and as well as savory recipes. This Grilled Peach and Prosciutto Summer Salad is another easy recipe to throw together for lunch and casual entertaining. The ingredients are simple yet the flavors are bold and consistent in every bite.
How to Make this Grilled Peach and Prosciutto Summer Salad
Step 1
Prepare your Vanilla Cardamom candied pecans. This recipe is very easy and will take under an hour to make, so you want to plan ahead. The pecans add another level of sweetness and texture that complements the grilled peaches.
Step 2
Rinse and cut your peaches in half and remove the seed. Heat the olive oil in a grill pan over medium-high heat then once hot, place the peaches open-faced down into the grill pan. Cook for 4-5 minutes on each side, then remove from the pan.
Step 3
Once the peaches have cooled enough to touch, slice them and gently wrap them in a slice of prosciutto. Do this for all of the peaches. Arrange your salad by adding the lettuce to a bowl, and add the prosciutto-wrapped grilled peaches, pecans, goat cheese, red onion, and drizzle on the balsamic dressing.

- Prosciutto slices, 1 slice per peach slice
- Spring salad mix and arugula
- Goat cheese
- Red onion (optional)
Balsalmic Vinaigrette
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil
- 2 tsp ground black pepper
- 1 tsp salt
Instructions
