Christmas is just 2 weeks away and while I have no clue what I’m having for dinner, I do know that this Gingerbread Red Velvet Affogato will be dessert. If you’re unfamiliar with affogato, this is the most delicious and simple after dinner dessert. An affogato is an Italian coffee-based dessert made with vanilla gelato or ice cream and drowned with a shot of hot espresso. So of course we are going to add a twist and incorporate two of our favorite Christmas flavors; red velvet and gingerbread.

These cookies are so fluffy and tasty. One person on Instagram said they’re like little red velvet pillows and I could agree more. This recipe uses cake mix, butter, cream cheese, egg, vanilla extract, and are great for making head. They do require a little bit of chill time so this will be a treat that you will want to prepare for in advance.

Had I known gingerbread syrup was going to be a hit I would’ve made this a lot sooner! While a traditional affogato does not have gingerbread syrup, we are adding it to give our dessert a boost of flavor and please believe that you appreciate the flavors so much. This is another recipe that requires some chill time so be sure to make this a couple hours before serving.

As for the espresso, you can use your favorite espresso or strong black coffee works well here too. I really hope you enjoy this recipe because it’s such a simple yet elevated dessert that adds a special ending to a Christmas meal.

How to assemble your Gingerbread Red Velvet Affogato

Place 1 red velvet cookie in a short glass, bowl, or espresso mug. Top with ice cream and pour the chilled gingerbread syrup on top. Serve with the espresso shot on the side then add the warm espresso before enjoying.
