I think it’s the constant pan sizzle that entices me more than anything when making Chicken Fajitas. They are probably one of the easiest recipes to make and so satisfying to prepare.This Chicken Fajita recipe is all about flavor and I love a well-seasoned piece of chicken! The seasonings I used are pretty straightforward and traditional but what I love about fajitas is that you can swap in your favorite seasonings to create new flavor experiences for yourself. I made these over the weekend and paired them with a refresh Paloma cocktail and the grapefruit citrus is a nice complement to the pepper spices on the chicken. I like to serve these on top of warm corn tortillas, rice & black beans, and for leftovers, I always make a delicious breakfast burrito.
Ingredients
Chicken breast or thighs. I used thighs but they are juicer and flavorful, in my opinion
kosher salt
Paprika
Garlic
Chili powder
Chipotle seasoning
Cumin
Creole seasoning
Cilantro
Lime juice
Olive oil
Red and yellow pepper
Red onion
How to Make Chicken Fajitas
Step 1
Place your cleaned chicken into a Ziploc bag and season with salt, paprika, garlic, chili powder, chipotle, cumin, creole seasoning. Add in the cilantro and lime juice and massage everything into the chicken so that all of the chicken is evenly coated. Let the chicken marinate for 20-30 minutes in the refrigerator.
Step 2
Add the oil to a cast iron or skillet and heat over medium-high heat. Once the oil is hot place your marinated chicken into the skillet, smooth side down. Cook on both sides until done, about 8-10 minutes on each side until its slightly charred and caramelized.
Step 3
Once the chicken is cooked, remove it from the pan to rest. Add in the sliced peppers and onions and saute until fragrant and tender. Turn the heat down if you need to.
Step 4
Slice the chicken into strips and serve the fajitas on warm tortillas, with rice and & black beans, or with any of your favorite toppings.
Cocktail pairing: Paloma
- 2 oz grapefruit juice (fresh is best)
- 1/2 oz agave
- 1 oz lime juice
- 2 oz Tequila or Mezcal
- Ice
- Sparkling water
Add everything except the sparkling water to a shaker and shake until chilled. Pour into a glass over ice and top with sparkling water. Garnish with a grapefruit wedge.
