A riff off the classic Daiquiri made using Cognac and cinnamon simple syrup.
1 and 1/2 oz Light rum
1/2 oz Cognac
3/4 oz cinnamon simple syrup
1/2 oz Lime juice
Add all of the ingredients to a shaker and shake for 7 minutes until chilled. Pour into a coupe glass. No garnish.
Cinnamon Simple Syrup.
Equal parts water and sugar. Bring to a boil then add in 3 cinnamon sticks and let it simmer for 15-20 minutes on low heat. Strain into a glass and refrigerate for up to 2 weeks.
